A Healthy Pineapple Martini Recipe. Is there such a thing?

The answer is....helllz yes! Everything in moderation right? So, I'd like to use the word "healthy" in moderation for the purpose of this blog post if we could? Here's why..if you are like me, you might eat healthy but you enjoy vodka which isn't well, all that great for you, but in moderation, done the right way. Its A OK. 

Typically my diet is free of dairy, white flour and sugar. The word "typically" is key. I try not to go crazy. Every now and then I binge on all of the previously named and quite often I have little cheat sessions with things like chocolate, bites of pizza etc. And I love an (sometimes more than) occasional fruity drink and martini. But, here's my problem. It seems just about every deliciously tasty martini or cocktail is also made with sugar. And while thats all fine and awesome as I sip, an hour later, I'm lucky if I can keep my eyes open because of major blood sugar crash. Plus, do you ever notice the worse hangovers come from an evening drinking those sugary drinks? 

So I've got a solution. The Aha moment (wink) came to me after brunch one Sunday at The Ivy in West Beverly Hills. Now, I'm not saying I invented this "Healthy Pineapple Martini". Im sure others have done the same or similar with fresh fruit infused vodka. It was more like a moment of realization that I should be mixing up a healthy replica in the comfort of my own home.

Even though pineapples aren't "on trend" right now, as pumpkins get all the attention this time of year,  I just couldn't hold off sharing this recipe any longer. 

 

You'll need to infuse your vodka a week or so before. Sound complicated? No way. Super Easy. Purchase a whole pineapple and vodka. Do yourself a solid and buy a good vodka. I like either Grey Goose or Belvedere. Let the pineapple ripen throughly and a day before you're going to cut into it let it stand on its head for about 24 hours. This will help all the sweeter, riper juices evenly spread throughtou the pineapple. See below pic for visual. :) 

Cut the pineapple into chunks and place them in a glass jar. Then pour the vodka into the container, enough to just cover the pineapple. Thats it. Place it in the fridge and in about 5-7 days it will be perfectly and deliciously infused. Honestly, you can stop right there. Sometimes I just drink it straight poured over some ice. Its soooo amazing.

If you want to take it a step further and create the Pinapple Coconut Martini here's what you'll need.

  • Freshly infused pineapple vodka
  • Fresh limes
  • Coconut water, juice or a coconut Bai
  • Ice
  • Martini Shaker

For one serving/martini you'll need about three shots of the infused vodka. Pour the vodka into a shaker along with about three ice cubes, a squeeze of fresh lime juice (don't go over board with the lime, literally just a squeeze) and a splash or any type of coconut water, milk, or, I like coconut Bais the best. Shake up and serve!

And there you have it. Any easy and Clean-Diet friendly Pineapple Martini. Sorry, I don't have an after picture...I think because I drank it and forgot to snap a shot. 

Here's another fun thought. Infused Vodka makes great gifts! Get mason jars (they come in a variety of sizes) and make up mini jars to give as gifts. Write the use on date on the card so people know when to consume. *The vodka will be ready in about 5 days and lasts about two weeks (and needs to kept refrigerated because of the fruit. )
